2 large ripe bananas, mashed
4 medjool dates, chopped
1 tsp vanilla extract
1/4 cup shredded coconut
1/3 cup almond meal
1/4 cup oats
1/3 cup lupin
1/3 cup apple sauce
1/4 cup almond milk
1 tbsp apple cider vinegar
1/2 tsp baking soda
1 tbsp baking power
3 tbsp pure maple syrup
1 tsp cinnamon
Preheat oven to 180 degrees C. Like a large baking tray with grease proof paper.
In a large bowl stip together mashed banana, vanilla, apple sauce, almond milk, apple cider vinegar and maple syrup.
In a seperate bowl combine remaining ingredients.
Slowly fold the dry ingredients into the wet ingredients. Mixture should be damp. If required, add more oats to absorb excess moisture.
Roll into balls and press down slightly onto baking paper.
Bake in the over for approx 15 minutes or until golden.
Set aside to cool.
Enjoy on their own, with a coffee or your favourite tea or however you like! Being high in protein they make for the perfect post workout or lunchbox snack.
